Hey foodies! Today I’m excited to share a fusion dish that combines the flavors of Thailand and India in a delicious and unexpected way. This Spicy Tofu Pad Thai Curry is perfect for those days when you crave something unique, flavorful, and comforting all in one dish.

Ingredients:

  • 300g tofu
  • 200g rice noodles
  • 50g red curry paste
  • 30g peanut butter
  • 400ml coconut milk
  • 1 medium carrot
  • 1 bell pepper
  • 2 spring onions
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oil

  • wooden spoon

  • cutting board

To start, cook the rice noodles according to package instructions and set them aside. In a wok, heat vegetable oil over medium heat and add the cubed tofu. Cook until golden and crispy, then remove from the wok and set aside.

In the same wok, add the red curry paste and peanut butter. Stir until fragrant, then pour in the coconut milk. Stir in the soy sauce, lime juice, and brown sugar. Add in the julienned carrot, sliced bell pepper, and chopped spring onions. Let the curry simmer for 5-7 minutes until the vegetables are tender.

Finally, add the cooked tofu and rice noodles to the wok, tossing everything together until well combined. Serve your Spicy Tofu Pad Thai Curry hot, garnished with extra spring onions and a wedge of lime.
