Today’s Special: Caramelized Onion and Blue Cheese Tart

As the weather starts to get cooler, I always find myself craving warm, comforting dishes to cozy up with. That’s why I’m excited to share my recipe for a Caramelized Onion and Blue Cheese Tart today. This savory tart combines the rich, sweet flavor of caramelized onions with the tangy bite of blue cheese, all nestled in a buttery, flaky pastry crust. It’s the perfect dish to enjoy on a chilly evening with a glass of red wine.

Ingredients:

  • store-bought puff pastry (2 sheets)
  • red onions (3, thinly sliced)
  • blue cheese (150g, crumbled)
  • fresh thyme (2 tbsp, chopped)
  • balsamic vinegar (2 tbsp)
  • olive oil (2 tbsp)
  • salt and pepper to taste

Kitchen Tools:

  • rolling pin
  • baking sheet
  • skillet
  • pastry brush

To start, preheat your oven to 200°C. Roll out the puff pastry sheets on a floured surface, then transfer them to a baking sheet lined with parchment paper. Use a knife to score a border around each sheet, about 1 inch from the edge, then prick the inner area with a fork to prevent it from puffing up too much while baking.

In a skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are soft and caramelized, about 20-25 minutes. Add the balsamic vinegar, salt, and pepper, then continue cooking for another 5 minutes to let the flavors meld together.

Spread the caramelized onions evenly over the puff pastry sheets, staying within the borders you scored. Sprinkle the crumbled blue cheese and fresh thyme over the top. Brush the edges of the pastry with a little olive oil to help them brown in the oven.

Pop the tarts into the preheated oven and bake for 20-25 minutes, or until the pastry is golden brown and puffed up. Let them cool slightly before slicing into squares and serving warm.

Final Touches:

This Caramelized Onion and Blue Cheese Tart weighs approximately 800g once cooked. It serves 6 people, with each serving weighing around 133g. One serving is estimated to contain about 300 calories.

Tip: For an extra decadent touch, try drizzling a bit of honey over the tart before serving. The sweet honey pairs beautifully with the savory onions and cheese, adding another layer of flavor to this already delicious dish.

I hope you enjoy making this Caramelized Onion and Blue Cheese Tart in your own kitchen. Feel free to experiment with different cheeses or herbs to make it your own. Bon appétit!
