  • 1/4 cup chopped pecans
  • 1/4 cup crumbled goat cheese
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • Salt and pepper, to taste

To prepare this dish, you will need the following kitchen tools:

Start by preheating your oven to 400°F (200°C). Cut the butternut squash in half lengthwise, scoop out the seeds, and place both halves on a baking sheet. Drizzle with olive oil, season with salt and pepper, and roast in the oven for about 30-40 minutes, until the squash is tender.

While the squash is roasting, cook the quinoa according to package instructions in a medium saucepan. In a separate pan, sauté the chopped kale with a bit of olive oil until wilted.
