Preparation

Toss to coat evenly and roast in the oven for 25-30 minutes or until the squash is tender.

While the vegetables are roasting, heat a large skillet over medium heat. Season the chicken thighs with salt and pepper and cook for 5-6 minutes per side until browned and cooked through. Remove the chicken from the skillet and let it rest before slicing into strips.

In the same skillet, add the minced garlic and cook for a minute until fragrant. Add the roasted vegetables and chickpeas to the skillet, along with the sliced chicken. Stir everything together and cook for another 2-3 minutes to let the flavors meld.

Serve the dish hot, garnished with fresh parsley for a pop of color and freshness.
