This recipe was inspired by a recent trip to a local farmers’ market where I picked up some fresh, seasonal produce that sparked my creativity in the kitchen.

Ingredients

  • 250g boneless, skinless chicken thighs
  • 1 small butternut squash
  • 1 can chickpeas, drained and rinsed
  • 1 red onion
  • 2 cloves of garlic
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation

Preheat your oven to 400°F (200°C). Begin by peeling and cubing the butternut squash, then chop the red onion and mince the garlic. Place the butternut squash, red onion, and chickpeas on a baking sheet, drizzle with olive oil, and sprinkle with cumin, smoked paprika, salt, and pepper. Toss to coat evenly and roast in the oven for 25-30 minutes or until the squash is tender.

While the vegetables are roasting, heat a large skillet over medium heat. Season the chicken thighs with salt and pepper and cook for 5-6 minutes per side until browned and cooked through. Remove the chicken from the skillet and let it rest before slicing into strips.

In the same skillet, add the minced garlic and cook for a minute until fragrant. Add the roasted vegetables and chickpeas to the skillet, along with the sliced chicken. Stir everything together and cook for another 2-3 minutes to let the flavors meld.

Serve the dish hot, garnished with fresh parsley for a pop of color and freshness.

Tips for Success

For an extra layer of flavor, try adding a squeeze of lemon juice over the finished dish before serving. The acidity will brighten up the flavors and take this unique recipe to the next level.
