Ingredients:

  • 250g cream cheese
  • 200g pumpkin puree
  • 100g Greek yogurt
  • 50g grated Parmesan
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg
  • 1 tbsp fresh thyme
  • 20g butter, melted
  • 50g breadcrumbs

To start, preheat your oven to 180°C (350°F). In a mixing bowl, combine the cream cheese, pumpkin puree, Greek yogurt, grated Parmesan, garlic powder, onion powder, salt, and black pepper. Mix well until smooth and creamy. Add in the egg and fresh thyme, stirring until fully incorporated.

In a frying pan, melt the butter over medium heat. Add the breadcrumbs and toast until golden brown and fragrant. Remove from heat and set aside. Press the breadcrumb mixture onto the bottom of a greased round cake pan to form the crust.

Pour the pumpkin cheesecake filling over the crust, spreading it out evenly. Smooth the top with a spatula. Bake in the preheated oven for 40-45 minutes, or until the cheesecake is set and slightly golden on top.

Once the cheesecake is done, remove it from the oven and let it cool for 10-15 minutes. Run a knife around the edge of the pan to loosen the cheesecake, then carefully remove it from the pan.
