Today, I’m excited to share with you my latest creation: Pumpkin Curry Risotto. This dish combines the creamy richness of traditional risotto with the spicy kick of curry and the subtle sweetness of pumpkin. It’s a perfect dish for a cozy night in or a festive gathering with friends.

Ingredients:

  • Arborio rice (300g)
  • Canned pumpkin puree (200g)
  • Coconut milk (400ml)
  • Vegetable broth (1 liter)
  • Curry powder (2 tbsp)
  • Garlic, minced (3 cloves)
  • Onion, finely diced (1 large)
  • Fresh ginger, grated (1-inch piece)
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)
  • Salt and pepper (to taste)

To start, heat a large skillet over medium heat and add a splash of oil. Sauté the diced onion, minced garlic, and grated ginger until fragrant. Add the Arborio rice to the skillet and toast for a few minutes until lightly golden.

Next, begin adding the vegetable broth to the skillet one ladleful at a time, stirring constantly and allowing the liquid to absorb before adding more. This slow process is crucial for achieving the creamy texture of the risotto.

Once the Arborio rice is cooked al dente, stir in the canned pumpkin puree, coconut milk, and curry powder. Continue to cook the risotto until it reaches a creamy consistency, adding more vegetable broth if needed. Season with salt and pepper to taste.

When the risotto is ready, remove it from the heat and let it rest for a few minutes. This will allow the flavors to meld together beautifully. Serve the Pumpkin Curry Risotto hot, garnished with fresh cilantro and lime wedges on the side for a burst of freshness.
