Today’s Unique Creation: Miso Maple Roasted Vegetables

I absolutely love experimenting with different flavors and ingredients in the kitchen, and today I wanted to share a recipe that combines the umami richness of miso with the sweet warmth of maple syrup. This dish is perfect for the fall season when root vegetables are abundant and hearty meals are a must.

Ingredients:

  • 500g carrots, peeled and chopped
  • 500g sweet potatoes, peeled and chopped
  • 300g parsnips, peeled and chopped
  • 1 large red onion, sliced
  • 3 tbsp miso paste
  • 3 tbsp maple syrup
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Kitchen Tools:

  • baking sheet
  • mixing bowl
  • whisk
  • oven

Start by preheating your oven to 400°F (200°C). In a mixing bowl, whisk together the miso paste, maple syrup, olive oil, salt, and black pepper until well combined. Add the chopped carrots, sweet potatoes, parsnips, and sliced red onion to the bowl, and toss everything together until the vegetables are evenly coated with the miso maple mixture.

Spread the vegetables out in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 30-40 minutes, or until the vegetables are tender and caramelized, stirring halfway through the cooking time.

Once the vegetables are roasted to perfection, remove them from the oven and transfer to a serving dish. The aroma of the miso and maple will fill your kitchen, tantalizing your senses with anticipation.

This Miso Maple Roasted Vegetables dish weighs approximately 1800g after cooking and serves 6 people. Each serving is around 300g, and with the natural sweetness of the maple syrup and the salty umami of the miso paste, each serving is approximately 250 calories.

A unique tip for this recipe is to sprinkle some toasted sesame seeds over the roasted vegetables just before serving. The nuttiness of the sesame seeds adds an extra layer of flavor and crunch that complements the dish perfectly.

I hope you give this Miso Maple Roasted Vegetables recipe a try and enjoy the surprising combination of flavors. Feel free to make it your own by adding or substituting your favorite root vegetables. Happy cooking!
