Hey foodies! Today, I’m sharing a delicious recipe that combines the cozy flavors of chai spices with the richness of pumpkin in a decadent cheesecake. With fall just around the corner, this dessert is the perfect way to welcome the season with a unique twist. Let’s get started!

Ingredients:

  • 400g cream cheese
  • 200g sugar
  • 250g pumpkin puree
  • 3 eggs
  • 2 tbsp chai spice mix
  • 1 tsp vanilla extract
  • 150g gingersnap cookies
  • 100g butter, melted
  • for serving

To start, preheat your oven to 350°F (180°C). In a food processor, crush the gingersnap cookies into fine crumbs. Add melted butter to the crumbs and mix until well combined. Press this mixture into the bottom of a springform pan to form the crust.

In a mixing bowl, beat the cream cheese until smooth. Gradually add in the sugar, pumpkin puree, eggs, chai spice mix, and vanilla extract. Mix until everything is well combined and smooth.

Pour the cheesecake filling over the gingersnap crust in the springform pan. Smooth out the top with a spatula. Bake in the preheated oven for about 45-50 minutes, or until the center is set.

Once baked, remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight to allow the flavors to meld together.

When ready to serve, carefully remove the cheesecake from the springform pan and cut into slices. Serve with a dollop of whipped cream on top for an extra indulgent touch.
