Today, I wanted to challenge myself in the kitchen and experiment with new flavor combinations. I decided to create a unique twist on a classic dish by infusing citrus flavors into a creamy mushroom risotto. The result was a bright and refreshing dish that combines earthy mushrooms with zesty citrus notes.

Ingredients:

  • Arborio rice (300g)
  • Mushrooms, sliced (200g)
  • Vegetable broth (1L)
  • White wine (100ml)
  • Orange zest (from 1 orange)
  • Lemon zest (from 1 lemon)
  • Parmesan cheese, grated (50g)
  • Butter (50g)
  • Garlic, minced (2 cloves)
  • Shallot, minced (1)
  • Salt and pepper to taste

  • Cutting board

To start, heat the vegetable broth in a saucepan over low heat. In another saucepan, melt the butter over medium heat. Add the minced garlic and shallot, and cook until softened. Add the sliced mushrooms and cook until they are browned and tender.

Stir in the Arborio rice and cook for a few minutes until it is lightly toasted. Deglaze the pan with white wine, stirring constantly until the wine is absorbed. Begin adding the warm vegetable broth, one ladleful at a time, stirring frequently until each addition is absorbed before adding more.

Once the risotto is creamy and the rice is cooked al dente, stir in the orange zest, lemon zest, and grated Parmesan cheese. Season with salt and pepper to taste. Remove from heat and let it rest for a few minutes to allow the flavors to meld together.

Serve the citrus-infused mushroom risotto hot, garnished with extra Parmesan cheese and a drizzle of olive oil. The bright citrus flavors will complement the earthy mushrooms perfectly, creating a refreshing and satisfying dish.
