Ingredients:

  • 1 small pumpkin, peeled and diced (about 500g)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 can of coconut milk (400ml)
  • 4 cups of vegetable broth
  • 1 tablespoon of curry powder
  • 1/2 teaspoon of cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons of coconut oil

To start, heat the coconut oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger, sautéing until fragrant. Next, add the diced pumpkin, curry powder, cayenne pepper, salt, and pepper, stirring to combine all the ingredients.

Pour in the vegetable broth and coconut milk, bringing the mixture to a boil. Reduce the heat and let the soup simmer for about 20-25 minutes, or until the pumpkin is tender.

Once the pumpkin is cooked through, carefully transfer the soup to a blender and blend until smooth and creamy. Be cautious when blending hot liquids to avoid any accidents.

Taste the soup and adjust the seasoning if needed. If you prefer a thicker consistency, you can simmer the soup for a bit longer to let it reduce.
