Introducing: Spicy Miso Pumpkin Soup

As the leaves start to change colors and the air gets a crisp chill, I find myself craving cozy, comforting dishes that warm me from the inside out. Today, I’m excited to share with you my unique recipe for Spicy Miso Pumpkin Soup. This dish is a fusion of seasonal flavors with a twist that will surely surprise and delight your taste buds.

Ingredients:

  • 500g pumpkin, peeled and diced
  • 50g miso paste
  • 400ml coconut milk
  • 1 tsp chili flakes
  • 20g fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 liter vegetable broth
  • 1 lime, juiced
  • to taste
  • to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • pot
  • immersion blender

To start, heat a pot over medium heat and sauté the garlic, ginger, and chili flakes until fragrant. Add in the diced pumpkin and cook until slightly caramelized. Pour in the vegetable broth and coconut milk, then bring the mixture to a simmer.

Once the pumpkin is fork-tender, turn off the heat and let the soup cool slightly. Using an immersion blender, blend the soup until smooth and creamy. Stir in the miso paste and lime juice, then season with salt and pepper to taste.

Serve the Spicy Miso Pumpkin Soup hot, garnished with a drizzle of coconut milk and a sprinkle of chili flakes for an extra kick. The combination of savory miso, spicy chili, and sweet pumpkin is sure to tantalize your taste buds and warm you up on a chilly day.

The approximate total weight of the cooked dish is 1200g, with 4 servings at 300g each. Each serving is approximately 250 calories.

One clever tip for this recipe is to roast the pumpkin before adding it to the soup for an extra depth of flavor. Simply toss the diced pumpkin in olive oil, salt, and pepper, then roast in a 400°F oven for 25-30 minutes until caramelized.

I encourage you to give this Spicy Miso Pumpkin Soup a try and feel free to personalize it to your liking. Whether you prefer it extra spicy or more subtle, this dish is versatile and can be easily adjusted to suit your taste preferences. Enjoy!
