Ingredients:

  • 500g pumpkin, peeled and diced
  • 50g miso paste
  • 400ml coconut milk
  • 1 tsp chili flakes
  • 20g fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 liter vegetable broth
  • 1 lime, juiced

Once the pumpkin is fork-tender, turn off the heat and let the soup cool slightly. Using an immersion blender, blend the soup until smooth and creamy. Stir in the miso paste and lime juice, then season with salt and pepper to taste.
