Today’s Creation: Caramelized Onion and Date Chicken

I’m excited to share a new recipe with you today that brings together sweet and savory flavors for a delicious twist on a classic chicken dish. As the fall season approaches, I find myself craving warm, comforting meals with a touch of sweetness to balance out the savory elements. This dish combines caramelized onions, juicy dates, and tender chicken for a flavor-packed meal that is sure to impress.

For this recipe, you’ll need the following ingredients:

  • 400g chicken breast (boneless, skinless)
  • 1 large yellow onion
  • 10 dates, pitted and chopped
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 sprig of fresh rosemary
  • Salt, to taste
  • Black pepper, to taste

To bring this dish to life, you’ll need the following kitchen tools:

  • chef’s knife
  • cutting board
  • skillet
  • tongs
  • oven

Start by preheating your oven to 375°F (190°C). Slice the yellow onion into thin strips and set aside. Heat olive oil in a skillet over medium heat, then add the sliced onion. Cook, stirring occasionally, until the onions are caramelized and golden brown.

While the onions are cooking, season the chicken breast with salt and pepper on both sides. Push the caramelized onions to the side of the skillet and place the seasoned chicken breast in the center. Sear the chicken on both sides until golden brown, then add chopped dates, balsamic vinegar, and fresh rosemary to the skillet.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through. The dates will caramelize and create a sticky, sweet glaze over the chicken.

Once the chicken is cooked, remove the skillet from the oven and let it rest for a few minutes before serving. Slice the chicken and serve it with a spoonful of the caramelized onion and date mixture on top.

This recipe serves 4 and each serving weighs approximately 200g. One serving of this caramelized onion and date chicken is approximately 300 calories.

For a unique twist, try adding a sprinkle of crumbled feta cheese on top of the chicken before serving. The salty tang of the feta pairs perfectly with the sweet dates and savory chicken.
