Hey there, foodies! I’m excited to share a new recipe that’s perfect for a fun and flavorful weeknight dinner. I was feeling adventurous in the kitchen today, so I created these mouthwatering Spicy Mango Shrimp Tacos that are sure to impress your taste buds.

Ingredients:

  • 400g large shrimp, peeled and deveined
  • 1 ripe mango, diced
  • 1 avocado, sliced
  • 1/2 red onion, thinly sliced
  • 1 jalapeno, diced
  • 1 lime, juiced
  • Handful of fresh cilantro, chopped
  • 8 corn tortillas
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Start by heating 1 tbsp of olive oil in a skillet over medium heat. Season the shrimp with cumin, paprika, salt, and pepper. Cook the shrimp for 2-3 minutes on each side until they are pink and cooked through. Remove the shrimp from the skillet and set aside.

In the same skillet, add the remaining olive oil and sauté the red onion and jalapeno until they are softened and fragrant. Add the diced mango and cook for another 2-3 minutes until the mango is slightly caramelized.

Return the cooked shrimp to the skillet and squeeze the lime juice over the mixture. Stir everything together to combine and let it cook for an additional minute to let the flavors meld.

Warm the corn tortillas in a dry skillet for about 30 seconds on each side until they are pliable. Divide the shrimp and mango mixture among the tortillas and top with sliced avocado and chopped cilantro.
