  • lobster meat (150g)
  • blood orange (1)
  • fennel bulb (1/2)
  • pistachios (50g)
  • honey (30ml)
  • saffron threads (a pinch)
  • olive oil
  • salt
  • black peppercorns

To begin, bring a large pot of salted water to a boil and cook the black squid ink spaghetti until al dente. While the pasta is cooking, heat some olive oil in a skillet over medium heat. Add the lobster meat and sauté until cooked through, then set aside.

In the same skillet, toast the pistachios until fragrant, then remove them and crush them slightly for added texture. Next, thinly slice the fennel bulb and sauté it in the skillet until caramelized.

In a small bowl, combine the juice of the blood orange, honey, and saffron threads to create a vibrant citrus sauce. Pour this over the fennel in the skillet and let it simmer until slightly reduced.
