As the weather starts to cool down, I find myself craving warm and comforting dishes. Today, I’m excited to share with you my unique twist on traditional tacos: Coconut Curry Potato Tacos. This dish combines the creaminess of coconut milk with the bold flavors of curry, creating a fusion of flavors that will surely impress your taste buds.

Ingredients:

  • 450g potatoes, diced
  • 200ml coconut milk
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tbsp curry powder
  • 4 tortillas
  • 1 lime, sliced
  • Fresh cilantro, for garnish

To start, heat a skillet over medium heat and add the diced potatoes. Cook until they start to brown and become crispy. Then, add the chopped onion and minced garlic, sautéing until fragrant.

Next, pour in the coconut milk and sprinkle the curry powder over the mixture. Let it simmer for a few minutes until the sauce thickens and coats the potatoes.

In a separate skillet, warm the tortillas until they are soft and pliable. Spoon the coconut curry potato mixture onto each tortilla, then top with fresh cilantro and a squeeze of lime juice.

One serving of these Coconut Curry Potato Tacos weighs approximately 200g and yields 4 tacos. Each taco is about 250 calories.

A clever tip for this recipe is to add a sprinkle of toasted coconut flakes on top for an extra crunch and depth of flavor.
