Today, I’m excited to share a unique and flavorful dish that combines the earthiness of roasted eggplant with the tangy sweetness of blackberry sauce. This recipe is a perfect way to celebrate the changing seasons and experiment with unexpected flavor pairings.

Ingredients:

  • 1 large eggplant (approx. 500g)
  • 200g fresh blackberries
  • 50ml balsamic vinegar
  • 2 tbsp honey
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Kitchen Tools:

  • baking sheet
  • saucepan
  • blender

To start, preheat your oven to 200°C. Cut the eggplant into 1-inch cubes and place them on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast in the oven for 25-30 minutes until golden brown and tender.

While the eggplant is roasting, prepare the blackberry sauce. In a saucepan, combine the blackberries, balsamic vinegar, honey, and a splash of water. Simmer over medium heat for 10-15 minutes until the blackberries break down and the sauce thickens.
