Today, I’m excited to share a recipe that’s perfect for a cozy fall dinner. These deliciously savory stuffed bell peppers are a family favorite that never fails to impress. The combination of flavors and textures in this dish is sure to leave you craving more!

Ingredients:

  • 1 cup cooked quinoa
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cumin powder
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

To start, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. In a large mixing bowl, combine the ground turkey, cooked quinoa, diced onion, minced garlic, smoked paprika, cumin powder, chopped parsley, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Stuff each bell pepper with the turkey and quinoa mixture, pressing down gently to pack the filling. Sprinkle grated Parmesan cheese on top of each stuffed pepper. Place the peppers in a baking dish and cover with foil.

Bake in the preheated oven for 25-30 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the filling is cooked through.

Once done, remove from the oven and let the stuffed peppers cool slightly before serving. The aroma of the smoked paprika and garlic will fill your kitchen, inviting everyone to the table.
