As the weather starts to cool down, I find myself craving something bright, bold, and full of flavor. That’s why I’m sharing my zesty mango chicken stir-fry recipe with you today. This dish is a perfect balance of sweet, tangy mango, tender chicken, and a medley of vibrant vegetables. It’s a quick and easy stir-fry that is sure to brighten up any meal.

Ingredients:

  • 2 chicken breasts (400g)
  • 1 ripe mango, cubed (200g)
  • 1 red bell pepper, sliced (150g)
  • 1 cup snow peas (100g)
  • 1 onion, sliced (100g)
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sriracha
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • Cooked rice for serving

Kitchen Tools:

  • chef’s knife
  • cutting board
  • garlic press
  • grater

To start, heat a tablespoon of sesame oil in a wok over medium-high heat. Add the minced garlic and grated ginger, and sauté until fragrant.

Dice the chicken breasts into bite-sized pieces and add them to the wok. Cook until the chicken is browned on all sides.

Next, add the sliced onion, red bell pepper, and snow peas to the wok. Stir-fry the vegetables until they are slightly softened but still crisp.

In a small bowl, whisk together the soy sauce, rice vinegar, sriracha, and cornstarch. Pour the sauce over the chicken and vegetables in the wok. Stir well to coat everything evenly.

Add the cubed mango to the wok and gently toss to combine. Cook for another 2-3 minutes until the sauce has thickened slightly and the mango is heated through.

Serve the zesty mango chicken stir-fry over a bed of cooked rice and enjoy the burst of flavors in every bite.
