As the weather gets cooler, I find myself craving warm, comforting dishes that are easy to make but still pack a flavorful punch. That’s why I’m sharing my recipe for honey glazed salmon with cinnamon roasted sweet potatoes today. This dish is the perfect balance of sweet and savory, making it a great option for a cozy dinner at home.

To start, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. In a small bowl, mix together the honey, cinnamon, olive oil, salt, and pepper. Place the salmon fillets on the prepared baking sheet and brush the honey mixture over them, making sure to coat each fillet evenly. Set aside.

Next, in a mixing bowl, toss the cubed sweet potatoes with a drizzle of olive oil, salt, and cinnamon. Spread the sweet potatoes out in a single layer on the other half of the baking sheet. Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the salmon is cooked through and the sweet potatoes are tender.

Once the salmon and sweet potatoes are done, remove them from the oven and let them cool for a few minutes. Serve the honey glazed salmon alongside the cinnamon roasted sweet potatoes for a delicious and satisfying meal.
