Ingredients:

  • 3 large red bell peppers (about 600g)
  • 1 cup heavy cream (240ml)
  • 2 tablespoons butter (30g)
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese (50g)
  • 12 oz pasta of your choice (340g)
  • Salt and pepper to taste

To start, preheat your oven to 400°F (200°C). Place the red bell peppers on a baking sheet and roast them in the oven for about 25-30 minutes, or until the skin is charred. Remove them from the oven and let them cool slightly before peeling off the skin and removing the seeds.

Next, in a saucepan, melt the butter over medium heat. Add the minced garlic and sauté for a minute until fragrant. Then, add the roasted red peppers and heavy cream to the pan. Simmer for about 5 minutes to allow the flavors to meld together.

Meanwhile, cook the pasta according to the package instructions until al dente. Drain the pasta and set aside a cup of the pasta water.

Transfer the red pepper mixture to a blender and blend until smooth. Return the sauce to the saucepan over low heat. Stir in the grated Parmesan cheese until melted and season with salt and pepper to taste.

Add the cooked pasta to the sauce and toss to coat, adding a bit of the reserved pasta water if needed to thin out the sauce. Serve the creamy roasted red pepper pasta hot, garnished with extra Parmesan cheese and a sprinkle of black pepper.
