  • Beef broth (800ml)
  • Fresh rosemary (2 sprigs)
  • Parmesan cheese (50g)
  • Butter (50g)
  • Salt and pepper to taste

To begin, season the beef tenderloin with salt, pepper, and chopped rosemary. Heat a skillet over medium-high heat and sear the beef on all sides until nicely browned. Transfer the beef to a baking dish and finish cooking in the oven at 350°F for about 20 minutes or until your desired level of doneness. Let it rest before slicing into medallions.

In a saucepan, heat the beef broth over low heat and add the saffron threads to infuse the liquid with their vibrant color and flavor.
