Today’s Recipe: Spicy Pineapple Chicken Stir-Fry

Growing up, my mom used to make a delicious sweet and sour chicken dish that I absolutely loved. Inspired by her cooking, today I’m sharing my own twist on a classic stir-fry recipe by adding a spicy kick with pineapple. This dish is perfect for those who love a combination of sweet and savory flavors all in one bite.

Ingredients:

  • boneless, skinless chicken thighs (500g)
  • pineapple chunks (fresh or canned) (300g)
  • bell pepper, thinly sliced (200g)
  • onion, diced (150g)
  • garlic cloves, minced (3 cloves)
  • ginger, grated (1 tablespoon)
  • soy sauce (50ml)
  • rice vinegar (30ml)
  • sriracha sauce (1 tablespoon)
  • cornstarch (1 tablespoon)
  • cooking oil
  • salt and pepper to taste

Kitchen Tools:

  • wok
  • chef’s knife
  • cutting board
  • wooden spoon
  • measuring cups and spoons

Start by slicing the chicken thighs into bite-sized pieces and seasoning them with salt and pepper. Heat some oil in a wok over medium-high heat and add the chicken. Cook until browned and cooked through, then remove from the wok and set aside.

In the same wok, add a bit more oil and sauté the garlic and ginger until fragrant. Toss in the diced onion and bell pepper, stirring constantly until they begin to soften. Add the pineapple chunks, soy sauce, rice vinegar, and sriracha sauce. Let the mixture simmer for a few minutes.

In a small bowl, mix the cornstarch with a little water to create a slurry. Pour the slurry into the wok and stir until the sauce has thickened. Return the cooked chicken to the wok and toss everything together until well combined.

Serving:

This spicy pineapple chicken stir-fry weighs approximately 1200g after cooking. It serves 4 people, with each serving weighing about 300g. Each serving is estimated to be around 350 calories.

One unique tip for this dish is to sprinkle some toasted sesame seeds on top before serving for an added crunch and nutty flavor. It’s a simple touch that elevates the dish and adds a burst of flavor with each bite.
