Indulgent Caramelized Banana Bread Pudding

Today’s Special: Caramelized Banana Bread Pudding

As the weather cools down and the leaves start to change colors, I find myself craving warm, comforting desserts. That’s why today, I’m excited to share with you my twist on a classic bread pudding — caramelized banana bread pudding. This rich and indulgent dessert is perfect for a cozy night in or a special occasion when you want to impress your guests.

Ingredients:

  • 2 large ripe bananas (about 300g)
  • 500ml whole milk
  • 250ml heavy cream
  • 3 large eggs
  • 150g granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 300g day-old bread, cut into cubes
  • 50g unsalted butter

I start by preheating the oven to 350°F (175°C) and greasing a baking dish with butter. In a saucepan, I combine the milk, heavy cream, and sugar over medium heat until the sugar is dissolved. In a mixing bowl, I whisk together the eggs, vanilla extract, and cinnamon. Slowly pour the warm milk mixture into the egg mixture, whisking constantly to prevent curdling.

Next, I add the bread cubes to the mixing bowl, making sure they are thoroughly coated in the custard mixture. I let the bread soak for about 10 minutes to absorb the liquid. In the meantime, I slice the bananas and sauté them in a pan with butter until they are caramelized and golden brown.

Once the bread has soaked and the bananas are caramelized, I gently fold the bananas into the bread mixture. I transfer everything into the prepared baking dish and bake in the preheated oven for 40-45 minutes, or until the pudding is set and golden brown on top.

For an extra special touch, I like to serve this caramelized banana bread pudding with a scoop of vanilla ice cream or a drizzle of caramel sauce. The combination of sweet, caramelized bananas and creamy custard is absolutely divine.
