Ingredients:

  • 600g of pumpkin, diced
  • 400ml of coconut milk
  • 750ml of vegetable broth
  • 1 medium onion, chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon of grated ginger
  • 1 teaspoon of turmeric powder
  • 1/2 teaspoon of cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons of coconut oil
  • Fresh cilantro for garnish

Then, I add the diced pumpkin to the pot, along with the vegetable broth. I bring the mixture to a simmer and let it cook for about 20-25 minutes, or until the pumpkin is tender.

Once the pumpkin is cooked through, I pour in the coconut milk and season the soup with salt and pepper. Using an immersion blender, I carefully blend the soup until it is smooth and creamy.

To serve, I ladle the turmeric-infused coconut pumpkin soup into bowls and garnish with fresh cilantro for a burst of freshness.
