Cozy Chorizo Butternut Squash Recipe

Today, I am excited to share a new recipe that I recently discovered and instantly fell in love with. This dish is perfect for those cozy autumn evenings when you crave something comforting yet unique. The combination of flavors and textures in this recipe is sure to surprise and delight your taste buds.

For this dish, you will need the following ingredients:
– 300g butternut squash, diced
– 200g chorizo sausage, sliced
– 1 red onion, chopped
– 2 cloves of garlic, minced
– 1 can of chickpeas, drained and rinsed
– 1 tsp smoked paprika
– 1/2 tsp cumin
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
– Olive oil

You will also need the following kitchen tools:

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon

To start, heat a bit of olive oil in a large skillet over medium heat. Add the diced butternut squash and cook until it starts to soften, about 5 minutes. Then, add the sliced chorizo sausage and cook until it begins to brown and release its flavorful oils.

Next, add the chopped red onion and minced garlic to the skillet. Cook until the onion is translucent and the garlic is fragrant. Then, add the drained and rinsed chickpeas, smoked paprika, cumin, salt, and pepper. Stir everything together gently to combine all the flavors.

Let the mixture simmer for another 5-10 minutes, allowing the flavors to meld together beautifully. Taste and adjust the seasoning if needed. Serve the dish hot, garnished with fresh chopped parsley for a pop of color and freshness.

The approximate total weight of the cooked dish is 800g, with approximately 4 servings. Each serving weighs around 200g, with an estimated calorie count of 350 per serving.

A clever tip for this dish is to drizzle a bit of balsamic glaze over the top right before serving. The slight tanginess of the glaze adds a wonderful depth of flavor that complements the richness of the chorizo and sweetness of the butternut squash perfectly.
