  • 1 red bell pepper, sliced
  • 1 jalapeno pepper, sliced
  • 1 onion, sliced
  • 3 cloves of garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tsp ground allspice
  • 1 tsp dried thyme
  • 1/2 tsp cayenne pepper
  • 2 tbsp olive oil
  • to taste

Start by preheating your oven to 400°F (200°C). In a mixing bowl, combine the soy sauce, brown sugar, allspice, thyme, cayenne pepper, minced garlic, and olive oil. Season the chicken thighs with salt and pepper, then coat them evenly with the jerk marinade. Let them marinate for at least 30 minutes in the refrigerator.

While the chicken is marinating, spread the sliced pineapple, red bell pepper, jalapeno pepper, and onion on a baking sheet. Drizzle with olive oil, salt, and pepper. Roast in the preheated oven for about 20 minutes or until the edges begin to caramelize.

Heat a skillet over medium-high heat. Sear the marinated chicken thighs skin-side down until golden brown, about 5 minutes. Flip the chicken and transfer the skillet to the oven. Roast for 25-30 minutes or until the chicken is cooked through.
