Cozy Fall Recipe: Spiced Pumpkin Risotto

Today’s Dish: Spiced Pumpkin Risotto

As the autumn leaves start to fall and the air becomes crisp, I find myself craving warm and comforting dishes that embody the essence of the season. Today, I’m excited to share with you my recipe for Spiced Pumpkin Risotto. This creamy and flavorful dish is the perfect way to celebrate the flavors of fall.

Ingredients:

  • 200g Arborio rice
  • 250g pumpkin puree
  • 1 liter vegetable broth
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 50g grated parmesan cheese
  • a handful of fresh parsley, chopped
  • to taste

Kitchen Tools:

  • saucepan
  • wooden spoon
  • chef’s knife
  • grater

To start, heat the vegetable broth in a saucepan until it’s just simmering. In another large saucepan, sauté the diced onion in olive oil until it’s translucent. Add in the minced garlic, ground cinnamon, and nutmeg, stirring until fragrant.

Next, add the Arborio rice to the pan and toast it for a minute before gradually pouring in a ladleful of the warm broth. Stir the rice continuously, allowing it to absorb the broth before adding more. Continue this process until the rice is creamy and cooked through, about 20-25 minutes.

Once the risotto reaches a creamy consistency, stir in the pumpkin puree and grated parmesan cheese. Season with salt and pepper to taste. Remove the pan from heat and let it sit for a few minutes to allow the flavors to meld together.

Before serving, sprinkle the chopped parsley over the top for a fresh and vibrant finish. This Spiced Pumpkin Risotto is best enjoyed hot, straight from the stove.
