Irresistible Pistachio Salmon with Strawberry Balsamic

Today’s Dish: Pistachio-Crusted Salmon with Strawberry Balsamic Reduction

As the weather starts to cool down and fall is officially here, I wanted to share a recipe that combines the flavors of the season with a unique twist. This pistachio-crusted salmon with a sweet and tangy strawberry balsamic reduction is a perfect dish to cozy up with on a chilly evening.

Ingredients:

  • salmon fillets (150g each)
  • pistachios (100g)
  • strawberries (200g)
  • balsamic vinegar (50ml)
  • honey (30ml)
  • olive oil (30ml)
  • salt and pepper to taste

Kitchen Tools:

  • food processor
  • baking sheet
  • saucepan

To start, preheat your oven to 180°C. In a food processor, pulse the pistachios until they are finely chopped. Season the salmon fillets with salt and pepper, then press the chopped pistachios onto the top of each fillet. Place the salmon on a baking sheet lined with parchment paper and drizzle with olive oil. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the crust is golden brown.

While the salmon is baking, prepare the strawberry balsamic reduction. In a saucepan, combine the strawberries (halved), balsamic vinegar, and honey. Bring to a simmer over medium heat, then reduce to low and let it simmer for 10-15 minutes, stirring occasionally, until the strawberries have broken down and the mixture has thickened.

Once the salmon is done, plate each fillet and drizzle with the strawberry balsamic reduction. The combination of the nutty pistachio crust with the sweet and tangy strawberry balsamic reduction creates a harmony of flavors that will leave you wanting more.
