  • 400ml coconut milk
  • 1 onion, chopped
  • 2 cloves of garlic, minced

Kitchen Tools:

  • chef’s knife
  • cutting board

To start, heat olive oil in a large pot over medium heat. Add chopped onions and cook until translucent. Add minced garlic and grated ginger, sautéing for another minute until fragrant. Next, add in the diced purple potatoes and cook for about 5 minutes until they start to soften.

Sprinkle curry powder, cumin, coriander, chili flakes, salt, and pepper over the potatoes. Stir well to coat the potatoes in the spices. Pour in the coconut milk and bring the mixture to a simmer. Let it cook for 15-20 minutes until the potatoes are tender.

Once the potatoes are cooked through, add in the cubed mango and stir gently to combine. Let the curry simmer for another 5 minutes to allow the flavors to meld together.

Serve the Purple Potato and Mango Curry hot, garnished with fresh cilantro. This unique combination of flavors will surely impress your taste buds!
