Moroccan-Inspired Lamb Tagine

Today, I’m excited to share a recipe that captures the rich flavors and warm spices of Morocco. This dish always reminds me of wandering through the bustling markets in Marrakech, where the scent of cumin and coriander fills the air. It’s perfect for cozy nights in or special occasions when you want to impress your guests with something exotic and delicious.

For this lamb tagine, you’ll need:

Ingredients:

  • 500g lamb shoulder, diced
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 100g dried apricots
  • 200g canned chickpeas
  • 500ml chicken stock
  • 1 cinnamon stick
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground ginger
  • 2 tbsp olive oil
  • to taste

Kitchen Tools:

  • Dutch oven
  • chef’s knife
  • cutting board
  • wooden spoon

Start by heating the olive oil in a Dutch oven over medium heat. Add the diced lamb shoulder and brown on all sides. This will take about 5-7 minutes. Once the lamb is browned, remove it from the pot and set it aside.

In the same pot, add the chopped onion and cook until soft and translucent. Next, add the ground cumin, ground coriander, and ground ginger, stirring to coat the onions in the fragrant spices. Return the lamb to the pot, along with the sliced carrots, dried apricots, canned chickpeas, cinnamon stick, and chicken stock.

Cover the pot and let the tagine simmer on low heat for 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together beautifully. Season with salt and pepper to taste.

Once the tagine is ready, serve it hot over couscous or with a side of crusty bread. The tender lamb, sweet apricots, and savory spices create a harmonious medley of flavors that will transport you straight to the vibrant streets of Morocco.

This Moroccan-inspired lamb tagine weighs approximately 1600g after cooking, yields 4 servings, with an average serving weight of 400g. Each serving is estimated to have around 550 calories.
