Cozy Butternut Sage Pasta Recipe

The Perfect Fall Comfort Food: Butternut Squash and Sage Pasta

As the weather cools down and the leaves start to change colors, I find myself craving cozy, comforting dishes to warm me up from the inside out. Today, I’m excited to share a recipe that combines the earthy sweetness of butternut squash with the aromatic freshness of sage to create a truly unique and delicious pasta dish.

I start by peeling and dicing a medium-sized butternut squash, aiming for around 500g of squash. I then finely chop a handful of fresh sage leaves, about 20g in total. In a large skillet over medium heat, I sauté the sage in a generous amount of olive oil until it becomes fragrant.

While the sage is cooking, I cook 300g of your favorite pasta according to the package instructions. Once the pasta is al dente, I reserve a cup of the pasta cooking water before draining the rest.

To the skillet with the sage, I add the diced butternut squash and continue to cook until the squash is tender and lightly caramelized. At this point, I add a pinch of red pepper flakes for a gentle heat and season with salt and pepper to taste.

Next, I add the cooked pasta to the skillet, along with a splash of the reserved pasta water. I toss everything together until the pasta is well coated in the butternut squash and sage mixture, adding more pasta water as needed to loosen the sauce.

To finish, I sprinkle the dish with grated Parmesan cheese and a handful of toasted walnuts for a crunchy texture. The combination of flavors in this dish is truly remarkable – the creamy sweetness of the butternut squash, the earthy aroma of the sage, and the nutty crunch of the walnuts all come together beautifully.
