Today’s Special: Spiced Lamb Stew with Blackberry Glaze

I’m excited to share a unique and flavorful recipe with you today that combines the rich, savory taste of lamb with the sweetness of blackberries. This dish is perfect for those cozy fall evenings when you want something comforting and indulgent.

Ingredients:

  • 500g lamb shoulder, diced
  • 200g blackberries
  • 1 red onion, chopped
  • 3 cloves of garlic, minced
  • 2-inch piece of ginger, grated
  • 1 cinnamon stick
  • 2 star anise
  • 2 bay leaves
  • 1 tbsp coriander seeds
  • 500ml chicken broth
  • 200ml red wine
  • 2 tbsp olive oil
  • to taste

To start, heat the olive oil in a Dutch oven over medium heat. Add the diced lamb shoulder and brown it on all sides. This will take about 5 minutes. Once the lamb is browned, remove it from the pot and set it aside.

In the same pot, add the chopped red onion, minced garlic, and grated ginger. Saute until the onion is soft and translucent, about 4-5 minutes. Add the coriander seeds, cinnamon stick, star anise, and bay leaves. Cook for another 2 minutes until fragrant.

Return the browned lamb to the pot and pour in the chicken broth and red wine. Season with salt and pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 1.5 hours, partially covered.

After 1.5 hours, add the blackberries to the pot and stir gently to incorporate. Let the stew simmer for another 30 minutes until the lamb is tender and the blackberries have broken down slightly to form a thick glaze.

Remove the cinnamon stick, star anise, and bay leaves before serving. Taste the stew and adjust seasoning if necessary. Serve hot, garnished with fresh herbs if desired.
