Unique Purple Sweet Potato Tahini Dish

Today, I’m excited to share with you a unique dish that I recently created for a cozy fall evening. This recipe combines unexpected flavors and textures to create a truly unforgettable dining experience. I hope you enjoy making it as much as I did!

Ingredients:

  • purple sweet potatoes (peeled and diced) – 400g
  • tahini – 50g
  • pistachios – 50g
  • dried apricots (chopped) – 50g
  • maple syrup – 30ml
  • smoked paprika – 1 tsp
  • black salt – 1/2 tsp
  • olive oil – 2 tbsp

Kitchen Tools:

  • chef’s knife
  • cutting board
  • baking sheet
  • oven
  • food processor

I start by preheating my oven to 200°C. I then toss the diced purple sweet potatoes in olive oil, smoked paprika, and black salt, and spread them out on a baking sheet. I roast them in the oven for about 30 minutes until they are tender and slightly caramelized.

While the sweet potatoes are roasting, I make the tahini sauce by blending tahini, maple syrup, and a splash of water in a food processor until smooth. In a separate bowl, I mix chopped pistachios and dried apricots together for a crunchy topping.

Once the sweet potatoes are ready, I plate them and drizzle the tahini sauce on top. I finish the dish with a generous sprinkle of the pistachio and apricot mixture for added texture and flavor.

Tip:

For an extra burst of flavor, you can sprinkle some za’atar seasoning on top of the dish before serving. It adds a Middle Eastern twist that complements the sweet and savory elements perfectly!

This dish weighs approximately 600g once cooked and serves 4 people. Each serving is around 150g and contains approximately 250 calories.
