This recipe was inspired by the last ripe peaches of the season and a craving for something exotic yet comforting. Let’s dive right into this deliciously surprising dish!

Ingredients:

  • 3 large ripe peaches (peeled and sliced)
  • 1 can (400ml) coconut milk
  • 1 cup cooked chickpeas
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons red curry paste
  • 1 cup vegetable broth
  • 2 tablespoons maple syrup
  • Juice of 1 lime
  • Salt and pepper, to taste
  • Fresh cilantro, chopped, for garnish

Let the curry simmer for about 15-20 minutes, until the peaches are tender and the flavors have melded together. Stir in the maple syrup and lime juice, adjusting seasoning to taste.
