Ingredients:

  • store-bought puff pastry (1 sheet, thawed)
  • yellow onions (4, thinly sliced)
  • fresh thyme leaves (1 tablespoon, chopped)
  • balsamic vinegar (2 tablespoons)
  • brown sugar (1 tablespoon)
  • butter (2 tablespoons)
  • olive oil (1 tablespoon)
  • salt (to taste)
  • black pepper (to taste)

I start by preheating the oven to 400°F (200°C) and rolling out the thawed puff pastry sheet into a rectangular shape on a lightly floured surface. I transfer the pastry to a baking sheet lined with parchment paper and using a knife, I score a border around the edges about 1 inch from the edge.

In a frying pan over medium heat, I heat the olive oil and butter until melted. Then, I add the sliced onions, salt, and pepper, cooking them slowly until they are caramelized and golden brown. This process usually takes about 20-25 minutes.

Next, I stir in the balsamic vinegar, brown sugar, and chopped fresh thyme, cooking for an additional 2-3 minutes until everything is well combined and fragrant. I then spread the caramelized onion mixture evenly over the puff pastry, staying within the scored border.

I bake the tart in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crisp. Once out of the oven, I let it cool slightly before slicing into squares or rectangles for serving.

The total weight of the cooked tart is approximately 800 grams, with 8 servings at around 100 grams each. Each serving is estimated to be around 300 calories.

One unique tip for this recipe is to sprinkle some crumbled goat cheese over the top of the tart before baking for an extra layer of flavor and creaminess.
