Today’s Special: Purple Potato and Sage Galette

Hey there foodies, today I’m excited to share with you a unique and flavorful dish that is perfect for the autumn season. I was inspired to create this Purple Potato and Sage Galette after a recent trip to the farmer’s market where I stumbled upon the most beautiful and vibrant purple potatoes. The combination of earthy sage and the colorful potatoes makes for a visually stunning and delicious dish that will impress your friends and family.

Ingredients:

  • 500g purple potatoes
  • 25g fresh sage leaves
  • 50g butter
  • to taste
  • 30ml olive oil
  • 250g all-purpose flour
  • 100ml cold water

Kitchen Tools:

  • rolling pin
  • baking sheet
  • chef’s knife
  • pastry brush

To start, preheat your oven to 200°C. Wash and thinly slice the purple potatoes, making sure they are all the same thickness. In a saucepan, melt the butter over low heat and sauté the sage leaves until fragrant. Remove the sage leaves from the butter and set aside.

In a mixing bowl, combine the flour, olive oil, cold water, and a pinch of salt. Mix until a dough forms. Roll out the dough on a floured surface into a circle large enough to fit your baking sheet. Carefully transfer the dough to the baking sheet.

Arrange the sliced purple potatoes on top of the dough in a spiral pattern, slightly overlapping each other. Brush the potatoes with the sage-infused butter and season with salt and pepper. Tear the sautéed sage leaves and scatter them over the potatoes.

Bake the galette in the preheated oven for 30-35 minutes, or until the potatoes are tender and the crust is golden brown. Remove from the oven and let it cool slightly before slicing and serving.

This Purple Potato and Sage Galette weighs approximately 1200g once cooked and serves 6. Each serving is about 200g and contains approximately 250 calories.

A clever tip for this galette is to sprinkle some grated Parmesan cheese over the potatoes before baking for an extra layer of flavor. Enjoy creating this unique dish and feel free to customize it with your favorite herbs and spices. Happy cooking!
