Hey there! Today, I’m excited to share my latest creation with you: a delicious Coconut Curry Ramen. This dish is perfect for those cozy nights when you’re craving something warm and comforting. The blend of aromatic spices, creamy coconut milk, and tender noodles is sure to satisfy your taste buds.

To make this flavorful dish, you’ll need the following ingredients:

  • ramen noodles (200g)
  • coconut milk (400ml)
  • vegetable broth (500ml)
  • red curry paste (2 tbsp)
  • tofu (200g, diced)
  • bell pepper (1, sliced)
  • mushrooms (100g, sliced)
  • green onions (2, chopped)
  • lime (1, juiced)
  • cilantro (for garnish)

Before you start cooking, make sure you have the following kitchen tools ready:

  • saucepan
  • wooden spoon
  • knife
  • cutting board
  • ladle

Start by heating a saucepan over medium heat. Add the red curry paste and coconut milk, stirring until well combined. Pour in the vegetable broth and bring the mixture to a simmer.

Next, add in the diced tofu, sliced bell pepper, and mushrooms. Let the vegetables cook until they are tender, about 5-7 minutes. Taste the broth and adjust the seasoning if needed.

In a separate pot, cook the ramen noodles according to package instructions. Once the noodles are cooked, drain them and divide them into bowls.

Pour the coconut curry broth over the noodles in each bowl. Squeeze fresh lime juice over the top and garnish with chopped green onions and cilantro.
