Mango Coconut Curry Pasta with Grilled Shrimp

This mango coconut curry pasta with grilled shrimp is a delicious twist on classic curry flavors, combining the tropical sweetness of mango with creamy coconut and savory shrimp. It’s a dish that never fails to impress and is sure to become a new favorite in your recipe rotation.

Ingredients:

  • linguine pasta (200g)
  • shrimp (300g)
  • mango (1, cubed)
  • coconut milk (200ml)
  • curry powder (1 tbsp)
  • garlic (2 cloves, minced)
  • onion (1, diced)
  • red bell pepper (1, sliced)
  • vegetable oil
  • salt and pepper to taste

Kitchen Tools:

  • large pot
  • grill pan
  • sauté pan
  • wooden spoon

To start, boil water in a large pot and cook the linguine pasta according to package instructions. While the pasta is cooking, heat a grill pan over medium heat and grill the shrimp until pink and cooked through, then set aside.

In a sauté pan, heat some vegetable oil over medium heat and sauté the minced garlic and diced onion until fragrant. Add in the sliced red bell pepper and cubed mango, cooking until the pepper is slightly softened.

Next, pour in the coconut milk and sprinkle in the curry powder, stirring until well combined. Let the sauce simmer for a few minutes to allow the flavors to meld together. Season with salt and pepper to taste.

Once the pasta is cooked, drain it and add it to the sauce, tossing to coat the pasta evenly. Add in the grilled shrimp and stir gently to combine everything.

Plate the mango coconut curry pasta with grilled shrimp and garnish with some fresh cilantro or a squeeze of lime juice for an added burst of flavor. Serve hot and enjoy!
