Today’s Dish: Spicy Pineapple Coconut Shrimp

Welcome, fellow foodies! Today, I’m excited to share a recipe that’s perfect for those who love a good balance of sweet and spicy flavors. This Spicy Pineapple Coconut Shrimp dish is a personal favorite of mine, inspired by a recent vacation to a tropical island. The combination of juicy pineapple, creamy coconut, and fiery spices is truly a treat for the taste buds.

Ingredients:

  • 400g shrimp, peeled and deveined
  • 200g fresh pineapple, diced
  • 250ml coconut milk
  • 2 tbsp chili paste
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 lime, juiced
  • Handful of fresh cilantro, chopped
  • Salt and pepper to taste
  • 2 tbsp oil

Kitchen Tools:

  • wooden spoon

To begin, heat oil in a skillet over medium heat. Add the minced garlic and grated ginger, and cook until fragrant. Then, add the diced pineapple and cook until it starts to caramelize.

Next, add the shrimp to the skillet and cook until they turn pink and opaque. Stir in the coconut milk, chili paste, and lime juice. Let the mixture simmer for a few minutes to allow the flavors to meld together.

Season with salt and pepper to taste. Sprinkle chopped cilantro on top for a burst of freshness before serving.

This Spicy Pineapple Coconut Shrimp dish weighs approximately 900g once cooked. It serves 4 people, with each serving weighing around 225g. One serving of this delectable dish contains approximately 350 calories.

Unique Tip:
