Colorful Kiwi Sweet Potato Delight

Trying out a New, Exciting Recipe Today

Hey there, foodies! Today, I’m thrilled to share a brand new recipe I’ve been experimenting with. As the weather cools down and the leaves start to change colors, I find myself craving warm, comforting dishes that remind me of cozy evenings spent with loved ones. This recipe combines unexpected ingredients to create a unique and flavorful dish that’s perfect for this time of year.

Ingredients:

  • purple sweet potatoes (500g)
  • brussel sprouts (200g)
  • kiwi (2 fruit)
  • pistachios (100g)
  • goat cheese (150g)
  • honey (50g)
  • olive oil
  • salt
  • pepper

Kitchen Tools:

  • chef’s knife
  • cutting board
  • baking sheet
  • oven
  • food processor

I start by preheating the oven to 400°F (200°C) and lining a baking sheet with parchment paper. I then peel and dice the purple sweet potatoes into small cubes, trim and halve the brussel sprouts, and peel and slice the kiwi. I spread the sweet potatoes and brussel sprouts on the baking sheet, drizzle with olive oil, sprinkle with salt and pepper, and roast in the oven for about 25-30 minutes until tender.

While the vegetables are roasting, I prepare the kiwi salsa by combining the sliced kiwi, chopped pistachios, crumbled goat cheese, and honey in a food processor. I pulse until the mixture is well combined but still has some texture.

Once the vegetables are done roasting, I transfer them to a serving dish and spoon the kiwi salsa on top. I give everything a gentle stir to combine the flavors, and then it’s ready to serve.

This unique dish weighs approximately 1200g once cooked and serves 4 people. Each serving is about 300g and has an estimated calorie count of 350.

One tip to make this dish even more flavorful is to sprinkle some extra pistachios on top just before serving for an added crunch. Feel free to play around with the ingredients and make this dish your own – the possibilities are endless!
