  • 200ml heavy cream
  • 1 tbsp pumpkin spice
  • vanilla ice cream (for filling)

To make these delightful treats, you will also need the following kitchen tools:

  • mixing bowls
  • whisk
  • piping bag
  • baking sheet
  • spatula

Start by preheating your oven to 300°F (150°C) and lining a baking sheet with parchment paper. In a large mixing bowl, whisk together the egg whites and granulated sugar until stiff peaks form. Gently fold in the almond flour and powdered sugar until a smooth batter forms. Transfer the mixture into a piping bag and pipe small circles onto the prepared baking sheet. Let the macarons rest for 30 minutes before baking for 15-20 minutes, or until they are set.

While the macarons are baking and cooling, whip the heavy cream with pumpkin spice until stiff peaks form. Fold in the pumpkin puree until well combined. Once the macarons have cooled, spread a generous amount of the pumpkin spice whipped cream onto one shell and top with a scoop of vanilla ice cream. Sandwich with another macaron shell and repeat with the remaining ingredients.
