Hello, fellow foodies! Today, I am excited to share with you a recipe that combines the sweetness of mango with the heat of spices – my Spicy Mango Chicken Curry. This dish is perfect for those chilly evenings when you want something comforting yet exciting on your dinner table. Let’s dive into the recipe!

Ingredients:

  • 500g chicken breast, diced
  • 1 ripe mango, peeled and cubed
  • 400ml coconut milk
  • 3 tbsp red curry paste
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 2 tbsp lime juice
  • Handful of fresh basil leaves
  • 2 tbsp vegetable oil

Start by heating vegetable oil in a large skillet over medium heat. Add the diced chicken breast and cook until browned on all sides. Remove the chicken from the skillet and set aside.

In the same skillet, add the red curry paste and cook for a minute until fragrant. Then, pour in the coconut milk, fish sauce, and brown sugar. Stir well to combine.

Return the cooked chicken to the skillet and add the cubed mango. Let the curry simmer for about 15-20 minutes until the chicken is cooked through and the mango is soft.

Finish off by adding lime juice and torn basil leaves. Stir gently to incorporate the flavors.

Serve the Spicy Mango Chicken Curry hot over steamed rice or with crusty bread on the side.

This recipe yields approximately 4 servings, with each serving weighing around 300g. One serving is approximately 400 calories.

One unique tip for this recipe is to sprinkle some toasted coconut flakes on top for added crunch and flavor.
