  • 1 red bell pepper, thinly sliced (100g)
  • 1 onion, finely chopped (50g)
  • 2 cloves of garlic, minced
  • A handful of fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tablespoons of olive oil
  • 1 teaspoon of ground cumin
  • 1 teaspoon of paprika
  • Salt and pepper to taste

Once the chicken is cooked through, add the diced mango and sliced red bell pepper to the skillet. Squeeze the lime juice over the mixture and stir well to combine. Let everything simmer for another 5 minutes to allow the flavors to meld together.
