Vibrant Quinoa-Stuffed Bell Peppers

Today’s Kitchen Adventure: Quinoa-Stuffed Bell Peppers

As the weather starts to cool down, I find myself craving warm and comforting dishes that are packed with flavor. Today, I’m excited to share my recipe for quinoa-stuffed bell peppers, a dish that never fails to impress with its vibrant colors and delicious taste.

Ingredients:

  • 4 large red bell peppers
  • 1 cup quinoa
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

To start, preheat your oven to 375°F (190°C) and prepare the bell peppers by cutting off the tops and removing the seeds and membranes. Place the bell peppers upright in a baking dish.

In a medium saucepan, cook the quinoa according to package instructions. Once cooked, fluff the quinoa with a fork and transfer it to a mixing bowl. Add the black beans, corn, cherry tomatoes, avocado, and cilantro to the quinoa, mixing gently to combine.

In a small bowl, whisk together the lime juice, cumin, paprika, salt, and pepper. Pour this dressing over the quinoa mixture and stir well to coat everything evenly.

Spoon the quinoa mixture into the hollowed-out bell peppers, pressing down gently to pack the filling. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the bell peppers are tender.

Once cooked, remove the foil and bake for an additional 5 minutes to allow the tops to brown slightly. Serve the quinoa-stuffed bell peppers hot, garnished with additional cilantro if desired.
