Ingredients:

  • boneless, skinless chicken breast (300g)
  • rice noodles (200g)
  • mango (1 large)
  • red bell pepper (1)
  • onion (1)
  • red chili pepper (1)
  • garlic (3 cloves)
  • soy sauce (50ml)
  • sriracha sauce (30ml)
  • sesame oil (15ml)
  • vegetable oil
  • salt and pepper

Kitchen Tools:

  • chef’s knife
  • cutting board
  • wooden spoon
  • tongs

Start by cooking the rice noodles according to the package instructions until they are al dente. Drain and set aside. In a wok, heat some vegetable oil over medium-high heat. Add the chicken strips and season with salt and pepper. Cook until the chicken is browned and cooked through, then remove from the wok and set aside.

In the same wok, add a little more vegetable oil if needed. Add the garlic, red chili pepper, onion, and red bell pepper. Stir-fry until the vegetables are tender-crisp.

Next, add the cooked chicken back to the wok along with the diced mango. In a small bowl, mix together the soy sauce, sriracha sauce, and sesame oil. Pour this sauce over the chicken and vegetables. Stir everything together until well combined and heated through.

Add the cooked rice noodles to the wok and toss everything together until the noodles are well coated in the sauce and heated through. Adjust the seasoning with salt and pepper if needed.

Serve the spicy mango chicken noodle stir-fry hot, garnished with some fresh cilantro or chopped peanuts for extra crunch.
