Tantalizing Tofu Tacos

Hey there, foodies! Today, I’m excited to share my latest creation: Tantalizing Tofu Tacos. This dish is perfect for a casual weeknight dinner with a twist. The combination of crispy tofu, zesty slaw, and creamy avocado sauce is sure to impress your taste buds.

Ingredients:

  • 200g extra-firm tofu, pressed and cubed
  • 6 corn tortillas
  • 100g purple cabbage, shredded
  • 50g carrots, julienned
  • 1 ripe avocado
  • 1 lime, juiced
  • a handful of fresh cilantro, chopped
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • to taste
  • to taste

  • cutting board

Start by preheating your oven to 400°F (200°C) and lining a baking sheet with parchment paper. Place the cubed tofu on the baking sheet in a single layer, drizzle with olive oil, sprinkle with cumin, paprika, salt, and pepper. Bake for 25-30 minutes until tofu is crispy.

While the tofu is baking, heat a skillet over medium heat. Warm the corn tortillas in the skillet until slightly browned and pliable, then set aside.

In a mixing bowl, combine shredded purple cabbage, julienned carrots, and chopped cilantro. In a separate bowl, mash the ripe avocado and mix in the lime juice to create the avocado sauce.

Once the tofu is crispy, assemble your tacos by placing a spoonful of slaw on each tortilla, topping with crispy tofu, and drizzling with avocado sauce. Serve hot and enjoy the explosion of flavors!
