Today, I’m excited to share a delicious recipe for pumpkin-stuffed bell peppers. As fall begins to set in, I love incorporating seasonal ingredients like pumpkin into my dishes. This unique combination may sound unusual, but trust me, the flavors blend perfectly to create a hearty and satisfying meal.

Ingredients:

  • bell peppers (4 medium)
  • canned pumpkin puree (400g)
  • quinoa (200g)
  • chickpeas (200g)
  • feta cheese (150g)
  • spinach (100g)
  • dried cranberries (50g)
  • pumpkin seeds (50g)
  • olive oil
  • salt and pepper
  • paprika

Kitchen Tools:

  • saucepan
  • mixing bowl
  • knife
  • spoon

Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes to create a hollow space for the filling. In a saucepan, cook the quinoa according to package instructions. In a mixing bowl, combine the cooked quinoa, canned pumpkin puree, drained and rinsed chickpeas, crumbled feta cheese, chopped spinach, dried cranberries, and pumpkin seeds. Season the mixture with salt, pepper, and paprika to taste.

Stuff the bell peppers with the pumpkin-quinoa mixture and place them in a baking dish. Drizzle olive oil over the peppers and cover the dish with foil. Bake in the preheated oven for 30 minutes, then remove the foil and bake for an additional 10-15 minutes until the peppers are tender and slightly charred.

Once cooked, remove the stuffed bell peppers from the oven and let them cool slightly before serving. This dish weighs approximately 1100g in total, with 4 servings at around 275g each. Each serving is approximately 350 calories.

One clever tip for this recipe is to sprinkle some extra feta cheese on top of the peppers before baking for a flavorful finishing touch. This adds a nice cheesy crust that enhances the overall taste of the dish.
