Today’s Special: Roasted Butternut Squash Toast with Spicy Maple Syrup

As the weather starts to cool down and the leaves change colors, I find myself craving warm and comforting dishes that remind me of cozy evenings by the fireplace. Today, I’m excited to share a unique recipe that combines the earthy sweetness of roasted butternut squash with a kick of spicy maple syrup on crunchy toast. This dish is perfect for a lazy weekend brunch or a quick and satisfying weeknight dinner.

Ingredients:

  • butternut squash (500g)
  • bread slices (4 slices)
  • spicy maple syrup (50ml)
  • olive oil (30ml)
  • salt (to taste)
  • black pepper (to taste)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • baking sheet
  • oven

To start, preheat your oven to 200°C. Peel and dice the butternut squash into small cubes, ensuring they are all roughly the same size for even roasting. Drizzle the olive oil over the squash cubes and season with salt and black pepper. Roast the butternut squash in the oven for about 25-30 minutes or until they are golden brown and tender.

While the butternut squash is roasting, toast the bread slices until they are crispy and golden. Once the squash is done, remove it from the oven and let it cool slightly. Meanwhile, warm the spicy maple syrup in a small saucepan over low heat until it is smooth and runny.

To assemble the dish, place a toasted bread slice on a plate and top it with a generous portion of roasted butternut squash cubes. Drizzle the spicy maple syrup over the squash and toast, allowing it to seep into the nooks and crannies. Serve immediately while the toast is still warm and the squash is tender.

This dish serves 4 and each serving weighs approximately 200g. One serving of this roasted butternut squash toast with spicy maple syrup contains around 300 calories. For an extra touch of flavor, try sprinkling some chopped fresh herbs like parsley or thyme on top before serving.

I hope you enjoy this delicious and unexpected combination of flavors in my roasted butternut squash toast with spicy maple syrup. Feel free to experiment with different types of bread or add a sprinkle of crunchy nuts for extra texture. Bon appétit!
