Today, I’m excited to share a recipe that always brings a burst of freshness to my day – black bean and mango tacos! These tacos are perfect for a quick and healthy meal that’s full of flavor and color. The combination of savory black beans and sweet, juicy mango is a match made in culinary heaven.

Ingredients:

  • 400g black beans, drained and rinsed
  • 1 ripe mango, diced
  • 1/2 red onion, thinly sliced
  • 1 bell pepper, diced
  • 1 lime, juiced
  • 1 avocado, diced
  • 1 tsp cumin powder
  • 1 tsp smoked paprika
  • 8 small tortillas
  • Salt and pepper to taste

To start, heat a skillet over medium heat and add the drained and rinsed black beans. Sprinkle the cumin powder, smoked paprika, salt, and pepper over the beans. Cook for about 5 minutes, stirring occasionally, until the beans are heated through and the spices are fragrant.

In a medium bowl, combine the diced mango, sliced red onion, diced bell pepper, and diced avocado. Squeeze the juice of one lime over the mixture and toss gently to combine.

Warm the tortillas in a dry skillet for about 30 seconds per side until they are soft and pliable.

To assemble the tacos, spoon the seasoned black beans onto each tortilla, then top with the mango salsa mixture. Serve immediately and enjoy the explosion of flavors in every bite!
