Today’s Recipe: Coconut Curry Cauliflower Rice

Greetings foodies! Today, I am excited to share a recipe inspired by my recent trip to Southeast Asia. The flavors of coconut and curry always transport me back to the bustling streets of Bangkok, where the aroma of exotic spices filled the air. So, let’s dive into this delicious and unique dish that is sure to tantalize your taste buds!

Ingredients:

  • cauliflower rice (400g)
  • coconut milk (200ml)
  • curry powder (2 tbsp)
  • ginger (1-inch piece, grated)
  • garlic (2 cloves, minced)
  • onion (1, finely chopped)
  • red bell pepper (1, sliced)
  • chickpeas (1 can, drained and rinsed)
  • spinach (handful)
  • salt and pepper to taste
  • coconut oil (2 tbsp)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • skillet
  • wooden spoon
  • grater

Start by heating coconut oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant. Stir in the grated ginger and curry powder, allowing the spices to bloom for a minute.

Next, add the sliced red bell pepper and chickpeas to the skillet. Cook until the vegetables are tender-crisp, then pour in the coconut milk. Allow the mixture to simmer for a few minutes to marry the flavors together.

Incorporate the cauliflower rice into the skillet, stirring well to coat it with the creamy curry sauce. Let the mixture cook until the cauliflower is tender but still retains a bit of bite. Season with salt and pepper to taste.

Finally, toss in a handful of fresh spinach and gently wilt it into the dish. Once the spinach has wilted, remove the skillet from heat. Serve the coconut curry cauliflower rice hot, garnished with fresh herbs like cilantro or a sprinkle of toasted coconut flakes.

Approximate total weight: 800g
Number of servings: 4

Approximate calorie count per serving: 250 calories

Unique tip: For an extra burst of flavor, try adding a squeeze of fresh lime juice over the dish just before serving. The acidity will brighten up the rich coconut curry and add a refreshing touch to each bite.

I hope you enjoy making and savoring this coconut curry cauliflower rice as much as I do! Have fun experimenting with different vegetables and spices to make this recipe your own. Bon appétit!
